Introduction

Ingredients

    16 ounces boneless, skinless chicken

    Marinade:
    1 can (8 ounces) unsweetened crushed pineapple, juice only, (reserve fruit for salsa)
    1 tablespoon low-sodium soy sauce
    1 tablespoon honey
    2 cloves garlic, minced
    1/4 teaspoon red pepper flakes

    Salsa:
    1 mango, peeled and diced
    2 kiwis, peeled and diced
    1/4 cup red onion, diced fine
    1 lime, juiced
    1 tablespoon cilantro, chopped
    1 tablespoon jalapeno pepper, diced fine (optional)

Tips

Serve this flavorful, lean chicken dish in warm tortillas, or over brown rice with a baked sweet potato and steamed green beans.

Directions

Open the pineapple and strain to separate juice from fruit.

Place the juice in a baking dish. Stir in the soy sauce, honey, garlic and red pepper. Slice chicken breasts into 4 4-ounce portions. Place chicken in the marinade and refrigerate for 2 hours or overnight. Prepare the salsa by combining all ingredients, including the reserved pineapple.

Preheat grill to medium heat or turn on broiler and place rack in the middle of the oven, about 6" away from the heat source. Grill or broil chicken for 4-5 minutes per side or until the meat is no longer pink. Serve with fruit salsa.

Makes 4 servings, 3 ounces cooked meat and 1/2 cup of salsa

    This is my second round with this recipe, but this round I changed out the chicken for shrimp. I left the shells on the shrimp, washed them really good. Marinated them a day, and grilled them the next day. Add the salsa, some dirty rice, and a grilled veggie of your choice, I did Asparagus. - 12/10/09

    Mmm, this was great! I made my salsa with a red jalepeno, left out the cilantro, and it had a really nice kick. Next time I'll let the chicken marinate for a few hours, but this was a big hit! I'm excited for my leftovers at lunch today :) We served with brown rice and a side of broccoli. - 1/12/10

    Thought this was great! It does make more salsa than you need so i would recommend doubling the amount of chicken or cutting the salsa ingredients in half, but the salsa is great, you could even put it on a salad. - 2/4/10

    My husband loved it, and I did, too. I was careful to grill the chicken breasts until not quite cooked through, then let them finish cooking wrapped in foil. They stayed very moist. - 11/18/09

    Good stuff, I will make again. I made half the salsa without cilantro, onions and jalapeno. I like both my husband didn't like the onions. I marinated the chicken for 3 hours and it had lots of flavor. - 9/21/09

    Yummy, Yummy I just love fruit. So when I can have a main dish with it as a main ingredient I'm in heaven. It was a very easy recipe to make and my who family really enjoyed it. It especially nice as a summer meal. - 7/31/09

    I cut mine in chunks and made kebobs. Next time I'll reserve some of the sauce from the marinade to use as a dipping sauce (before putting the chicken in it). I did marinate it over night too. Quick and easy to make. - 5/12/10

    I saw a recipe similar to this today on the food network with Guy but hallowed out the pineapple and used the pineapple from it and cooked shrimp to go in the pineapple boats and poured the salsa over the shrimp looked wonderful. - 1/3/10

    I make a similar dish with swordfish. I serve it with coconut brown jasmine rice and assorted grilled veggies. LOVE the fruit salsa! Also think it would work well with jicima salad. - 6/22/10

    I made this recipe for guests this weekend, and everyone including my husband raved about it. It was a perfect summer entree wonderful! Easy, very tasty, and light!
    I marinated chicken and salsa for 24 hours.

    I liked this a lot. Didn't have a lot of time to marinate, yet it still turned out well. Great for those who cannot eat gluten if you use GF soy sauce. Served with butternut squash risotto. Yummy! - 3/27/10

    I marinated the chicken for about 4 1/2 hours, and sadly, it didn't have much flavor. Next time I make it I'm going to let it set overnight and see how it turns out. The salsa was AMAZING, though, and my whole family LOVED it! It went great with the chicken and added more flavor. - 2/20/10

    I really liked the chicken with the marinade and the salsa. I forgot to make rice and was starving, so ended up with just the chicken topped with salsa and had half an acorn squash with it. It wasn't a must have, but definately a great grilled chicken dish. - 1/18/10

  • I bought frozen, cubed mango since I find fresh mangos hard to cut. Next time I may dice cubed pineapple, instead of using crushed - to make it looks more like diced, traditional salsa. I served this on tortillas, with sliced avocado available to add. - 8/5/14

  • I made this with chicken and then had the salsa on some grilled swordfish both were great! No mangos to be found anywhere here so I added some fresh apricots instead, I only cooked one breast so I had maranade left over,I added it to a pan and boiled it for a few minutes and served it over the rice - 6/15/14

  • My chicken was already cooked when I read this recipe. So I made the salsa - no mango or pepper in the house, so tweaked. P'apple, kiwi, onion + lime juice, herbs, finely chopped garlic, pinch of cayenne. Mixed well, then basted the chicken while it was still warm.

  • Kiwi is a significant color ingredient for the salsa: why is it not in the photo? This recipe is also perfect for cooking in a grill pan, for those who don't have an outdoor grill and don't want to heat up the broiler. Marinating time is crucial to develop flavors. - 7/19/12
