Ground turkey and fat free cream cheese combine with traditional Mexican spices and cheddar cheese in this baked, ooey gooey dish. A hit at any party!
1 lb ground turkey
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped green bell pepper
1/2 cup finely chopped onion
2 garlic cloves, minced
1 tbsp cumin
1 tbsp chili powder
3/4 cup crushed tomatoes
salt and pepper to taste
6 oz cream cheese (I used Phildelphia Fat Free)
1 cup Shredded Mexican blend cheese
1 cup Shredded Taco blend cheese (has spices in it)
When turkey is cooked but not crisp, add cumin, chili powder, garlic, peppers and onions. Reduce heat (you don't want the turkey crispy) and cook, stirring often, until the veggies are just soft. Add tomatoes.
Reduce heat to low, and preheat over to 350. When mixture is heated through but NOT bubbling add cream cheese and stir until it is thoroughly melted. Taste and adjust spices as needed.
Turn off heat and stir in 3/4 cup of each of the cheeses, reserving 1/4 cup of each cheese.
Pour the sauce into a large casserole (or other oven-safe) dish, then sprinkle reserved 1/4 cup cheeses over the top. Bake covered until for 15 minutes, or until the cheese on top has melted and the whole dish is bubbly.
Serve with tortilla chips and enjoy!
For extra zing you can try adding jalapeno peppers or canned chili peppers in addition to the other peppers used.
