Introduction

a basic coconut rice recipe, using light coconut milk; also wonderful with added ingredients, such as toasted coconut, sliced almonds,cashews, craisins, raisins, edamame, baked tofu, black beans, mandarin orange, as well as added spices: cardamon, curry, cinnamon, or allspice I eat this cold for breakfast, with rice milk, added coconut & nuts. Ingredients

    1 can light coconut milk
    water to make total liquid 2 cups
    1 cup brown rice

Directions

rinse the rice; bring the coconut/water to a boil, and add the rice; let cook down over medium high heat awhile before covering. Cover, and let cook on low until all liquid is absorbed, about 30-35 minutes. Add any spices as you add the rice; add other ingredients after cooking rice. Makes 8 servings, 1/2 cup each.
