Cilantro-Lime Tilapia

Ingredients

Tilapia fillet (4 oz)
1 tsp olive oil
juice from half a lime
1/2 tbsp chopped fresh cilantro
1/2 cup cooked spinach
1/4 cup chopped fresh tomatoes
1 tbsp shredded Parmesan cheese
Garlic/garlic powder (optional)
Tips
Directions
Brush fillet with 1 tsp olive oil.
Squeeze juice from half a lime over fillet.
Sprinkle garlic powder (optional)over fish.
Sprinkle fillet with cilantro .
Broil in oven 6 inches from heat, about 5-7 minutes, or until fish flakes easily with a fork
While tilapia is broiling, place spinach in microwave safe dish.
Toss with garlic powder or minced garlic (optional).
Cook according to package directions.
Keep covered & warm until fillets are done.
Spoon cooked spinach on a plate, place fish over spinach, top with chopped tomatoes and shredded cheese.
Serve with herb bread if desired.

MARGARITA TILAPIA?!? This was really good, but I too changed it up a bit. I skipped the spinach, but added a little bit of salt, more lime and less cheese. As others have suggested, I added the tomatoes (halved, grape tomatoes) prior to broiling. The blackened peels on the tomatoes were awesome. - 5/5/13

I changed the recipe a bit but it came out delicious! I added garlic powder, paprika, onion powder, salt and pepper to the fish. I also made packets of aluminum foil for each filet to contain the lime juice. I omitted the spinach entirely and just sliced up some tomatoes to top the fish with. Yum! - 6/15/12

I would cook this recipe again. I prefer to use fresh ingredients. I used garlic on the fish and the spinach. The red, white and green colors were bright and appetizing. I added halved cherry tomatoes to the spinach while it was still warm. Did not need cilandro. A good, quick mid week meal. - 7/20/11
