1 cup - onion, chopped
1 cup - celery, chopped (diagonal)
1 cup - carrot, chopped (diagonal)
1 cup - mushrooms, chopped
1/2 - sweet yellow bell pepper, chopped
2 cloves - garlic, minced
12 large - shrimp, cooked
10 small - bay scallops, raw
1 - cooked chicken thigh, chopped
2 tbsp. - extra virgin olive oil
1 pkg. - Clubhouse Stir Fry Sauce Mix (could not find it in the ingredients list so I listed Kikkoman instead
Stir fry until veggies are almost cooked, or somewhat tender. Add shrimp, scallops, and chicken. Stir fry for another 5 minutes or until scallops are cooked. Shrimp and chicken were already cooked before hand. Mix sauce mix with 1/2 cup of water then add to wok. Stir fry for 2 minutes until sauce thickens. Serve over brown rice.
