Hummus and Veggie Pasta

Introduction

Great way to use up leftover hummus! Great way to use up leftover hummus!
Number of Servings: 4

Ingredients

    6 oz hummus
    1 T. extra virgin olive oil
    1 T. crushed red pepper
    1 pkg button mushrooms - sliced
    1 medium yellow onion - diced
    3 garlic cloves - minced
    1 medium cucumber - diced
    1 can artichoke hearts
    4 oz. sliced black olives
    8 oz. whole wheat thin spaghetti noodles

Directions

Cook pasta according to directions. Drain - reserving 1/2 cup of the water.

While pasta is cooking saute the veggies (except the cucumber) in the olive oil with the red pepper flakes and pepper. Remove from heat, add in the hummus and a tablespoon (or until your desired consistency) of the starchy cooking liquid from your noodles. Mix together and then add the noodles and the reserved cucumber.

Makes 4 servings.
