Jim's Meatloaf

Introduction

Named after my husband as it's the first time he has like meatloaf, and if he likes it, anybody will! Very moist and tasty! Named after my husband as it's the first time he has like meatloaf, and if he likes it, anybody will! Very moist and tasty!
Number of Servings: 8

Ingredients

    2 LB Extra Lean Ground Beef
    2 tsp worcestershire sauce
    3/4 C. Seasoned bread crumbs
    1/2 C. Finely diced Onion
    1 Large Egg - beaten
    2 tsp/cubes beef boullion (crumbled)
    3/4 C. Ketchup
    1/2 C. Brown Sugar
    1 tsp. Dry mustard

Directions

Preheat oven to 350 degrees.
Combine ketchup, brown sugar, and dry mustard in small bowl until smooth - set aside.
In Large Bowl (I use stand mixer) combine beef, bread crumbs, onion, egg, worcestershire sauce, boullion, and 1/3 of ketchup mixture - mix well.
Place in a 9x13 pan and form into a loaf in the center - so sides of meat don't touch the pan.
Cook at 350 for 1 hour.
Pour off fat.
Pour reserved ketchup mixture over meatloaf.
Bake an additional 10 minutes.
Remove from oven and let stand 5 minutes before slicing.

Makes 8 - 4 oz servings.
