Chocolate Pound Cake

Introduction

Lower fat version, but you wouldn't know by tasting this delicious cake! Lower fat version, but you wouldn't know by tasting this delicious cake!
Number of Servings: 24

Ingredients

    3 C all-purpose flour
    1/3 C cocoa
    1 Tbsp baking powder
    1/2 tsp salt
    2 C packed light brown sugar
    1/2 C pumpkin, canned
    6 Tbsp butter
    4 tsp vanilla extract
    5 whole egg whites, at room temperature
    2 C semi-sweet chocolate chips (12 oz pkg.)
    1-2/3 C nonfat milk
    powdered sugar (optional-not included in nutritional calculations)
    fresh berries (optional-not included in nutritional calculations)

Directions

In medium bowl, combine flour, cocoa, baking powder & salt. In large mixer bowl, beat brown sugar, pumpkin, butter & vanilla. Add egg whites; beat on medium speed for 2 minutes.

In small, heavy saucepan over low heat, melt chocolate chips, stirring until smooth; beat into creamed mixture. Gradually beat in dry ingredients alternately with milk.

Spoon into 10-inch bundt cake pan sprayed with non-stick cooking spray. Bake in preheated 350 degree oven for 50-60 minutes or until wooden pick comes out clean. Cool in pan for 30 minutes. Invert cake onto wire rack to cool completely. Sprinkle with powdered sugar and serve with berries.
