Tomato, Bean and Spinach with Whole Wheat Spaghetti

Introduction

Made with low sodium and high fiber in mind. I've seen several variations on this, but this is my personal favorite. Made with low sodium and high fiber in mind. I've seen several variations on this, but this is my personal favorite.
Number of Servings: 4

Ingredients

    - Four Cups/Servings: Whole Wheat Spaghetti
    - One Clove: Garlic
    - One Tbsp: Extra Virgin Olive Oil
    - One Can: Spinach (can use equivalent amount in fresh or frozen if available)
    - One Can: Del Monte Diced Tomatoes no salt added (recommended to use garlic, basil and oregano flavor)
    - One Can: Great Northern White Beans (Can also use reconstituted dry beans. Start with one cup dry, will result in two cups when cooked.)
    - Optional: Parmesan Cheese, grated

Directions

Boil water and begin to cook the spaghetti.

Finely dice the garlic, and saute in Olive Oil. Add Tomatoes and beans and bring to a simmer. Add spinach, cover and cook for 10 minutes.

To serve: one cup of spaghetti, and one cup of sauce.

Makes four servings.
