Tomato, Cucumber Relish

Introduction

Great low-cal/fat salad for hot summer days! Great low-cal/fat salad for hot summer days!
Number of Servings: 3

Ingredients

    1 red pepper, seeded and finely diced
    1 English cucumber, finely diced (or 1/2 depending on size and preference)
    2 large tomatoes, seeded and finely diced
    1 jalapeno, finely diced
    1 tablespoons olive oil
    2 tablespoons balsamic vinegar
    1 teaspoon dried oregano
    Salt
    Freshly ground black pepper

Directions

Dice the ingredients. Add the oil and vinegar and voila! Makes 3 3/4 cup servings.

    Actually, I did add a jalapeno!! I added it for the nutritional data but forgot to type it in the ingredient list...wish we didn't have to do that!
