Introduction

You won't be disappointed. This got its name because a friend's son forgot to make it one night. She was very disappointed in him!

You can add ground beef, tofu, or chicken breasts if you want to serve as a main dish.

Ingredients

    1 cup brown rice (unprepared)
    1 jar salsa
    1 can stewed tomatoes
    1 can black beans (rinsed and drained)
    1 can sweet corn (rinsed and drained)
    seasonings to taste - pepper, cumin, chilli powder

Directions

Preheat oven to 375.
Place all ingredients in an oven-safe dish.
Bake for 30 minutes.
Stir.
Bake for 20 more minutes.

You can serve this as a side-dish or main dish. Vegetarian or not.

  • Sounds good. But a cup of uncooked rice seems like it would need more liquid than just the juice from a can of tomatoes and some salsa. Are you sure there isn't something missing? - 6/24/09

    This is enough liquid. The step to stir mid way is important so the rice on top moves to the bottom to pick up moisture. Check it at this point. You could add a splash of water if you need, but I have not had to. Try it out.

    Sometimes I add second variety of bean or onions too.
