Lowfat Lemony Garlic Hummus

Introduction

You can add more or less of just about any ingredient for your taste. For less fat, omit Tahini, increase Yogurt (this will make it a bit more smooth (in which case use less water and/or lemon juice). Ingredients

    2 C. Chickpeas (garbanzo beans)
    1Tbsp Sesame Tahini
    1/4 C. Plain Fat Free Yogurt
    1/4 C. warm water
    1/8 Olive Oil
    1/4 C. Lemon Juice (or more)
    2 cloves Garlic
    3/4 to 1 Tsp Salt - to taste
    1 Tsp Cumin, or more to taste
    Pepper to taste

Directions

1. Combine chick peas, tahini, yogurt, warm water, olive oil and lemon juice in the bowl of a food processor. Process until smooth.
2. Add garlic, salt, cumin and pepper to taste; process to blend.
3. Taste and add seasonings as desired (remember, you can add but can't take away so start sparingly!) including garlic and lemon juice.

Serve with pita, veggies or on sandwiches.

Makes about a half quart. Eight (8) 1/4 C servings.
