Jalapeno Chicken from Linda's Low Carb

Introduction

I found this recipe on a low carb site. Its great and I make it all the time.
When making for the kids I just omit the peppers and they love it!
Serve it with rice.

Number of Servings: 6

Ingredients

    6 boneless, skinless chicken breast
    6 tbsp. taco seasoning or more if needed.
    12 pickled jalapenos, or sliced if you like.
    6 one oz. pcs. of monterey cheese. Or cover each pc. with shredded.

Directions

season chicken with taco season, pan fry until done.
turn and season both sides while frying.
place chicken on baking sheet , I always pour the juices when frying over the chicken breast.
Slit jalapenos lengthwise and open flat. (you can use sliced pickled jalapenos if you choose to), Remove seeds if you want and arrange on chicken. 2 per breast, or I cover the top of chicken breast with sliced if that is what I am using.
Cover with monterey cheese.
Bake at 350 for about 10 minutes until cheese is melted.
