Lentil Soup

Introduction

I am eyeballing the ingredients, really just add and subtract what you like of everything. I am eyeballing the ingredients, really just add and subtract what you like of everything.
Number of Servings: 6

Ingredients

    1/2 Cup Onion
    1/2 Cup Carrot
    1/2 Cup Celery
    2 Potatoes
    4 Cups Vegetable Broth
    1 Tbs Cilantro
    Salt to taste
    Pepper to taste

Directions

Use the frozen bag of starter veggies (onion, carrot, celery) and saute that in a fry pan with cooking spray. Peel and Chop the potatoes, or leave skin on. Throw everything in a pot with the broth and season to taste. Bring to a boil then turn to low-medium heat and let it simmer for a couple hours till the potatoes are soft. Sometimes I like to squeeze a lemon over it at the end for a little zing.
