Creamy Penne Vegetable Primavera

Introduction

This is extremely creamy and very low in calories and fat. I use these veggies because they are my favorite but I also tend to throw in any leftovers I have from other meals. The reason this works is because the Vegetables are the main part of the dish and the Penne is just an ingredient. This is extremely creamy and very low in calories and fat. Number of Servings: 4

Ingredients

    2 T Olive Oil
    2 T Light Italian Dressing
    2 Medium Yellow Onions or 1 Large Vidalia, Diced
    1 Red Bell Pepper, Diced
    1 Green Bell Pepper, Diced
    2 Carrots, Sliced into Coins
    1 Broccoli Crown Chopped
    5 Cloves Garlic
    3-4 Ounces Penne Pasta.
    1 8 Oz Pkg Fat Free Cream Cheese, cut into small cubes
    1 14.5 Oz Can Low Sodium Broth (If you are not a vegetarian, Chicken makes this very flavorful)

Directions

Makes 4 - 1 Cup Servings (Can be more or less depending on the vegetable quantities)

Boil water and cook the penne...

In a separate pan, saute the onions for several minutes in the olive oil. Add the Other vegetables, Garlic and Italian dressing and saute until the vegetables are almost cooked through.

Add the Broth and stir in the cream cheese until it creates a creamy sauce with the vegetables. Add the Cooked Penne and Toss.

Sprinkle with Parmesan Cheese if desired (This will add to the nutritionals).
