Mediterranean Chicken Foil Pack

Ingredients

I put this together using leftover ingredients, like *most* of a zucchini and *most* of a package of chicken tenderloins... so the amounts are somewhat estimated. With stuff like this, you can just chop chop chop and see how much looks good! :)
~12 oz. chicken tenderloins or chicken breast, cubed
1 red pepper, chopped into 1" pieces
1 zucchini, sliced and halved
1 small summer squash, sliced and halved
1 cup onion, roughly chopped
1 can Hunt's Fire Roasted Tomatoes, drained
1 can chick peas/garbanzo beans, drained and rinsed
salt & pepper
1 tbsp. each of basil, thyme, rosemary
3 tbsp. balsamic vinagrette dressing
Directions
Marinate chicken in balsamic vinagrette dressing, covered in the fridge, while you prep the other ingredients (longer if desired). Leave the veggies fairly thick - large bite size pieces. That way they don't cook down to nothing.
Mix all veggies in a large bowl. Season to taste with salt, pepper, and herbs. Add the marinated chicken, and mix. Portion onto large sheets of foil (about 18" long). This recipe made 3 really large servings, but this is easily 4 servings if you add a side of couscous or something.
To fold, pick up opposite ends of the foil (the cut edges), meeting in the middle, and fold the edges down a few times to seal. Fold the open sides to make a tightly sealed foil pack, leaving some airspace above the chicken and veggies.
Place on a baking sheet and bake at 375 for about 25-30 minutes. Carefully open foil packs, watch out for the steam shooting out - but that's how you know it's done! ;) Dump into bowls or eat out of the foil pack.
Makes 3 generous servings, or 4 smaller servings.
