Three Bean and Chicken Chili

Introduction

Ingredients

    1 - T. Extra Virgin Olive Oil
    1 - pound chicken (diced, ground or shredded, it's up to you)
    1 - medium sized onion
    2 - cloves garlic

    2 - cups of diced tomatoes (canned or fresh, recipe is calculated using fresh)
    4 - small cans of tomato sauce
    1 - can red kidney beans (drained and rinsed)
    1 - can black beans (drained and rinsed)
    1 - can white beans (I use great northern) (drained and rinsed)
    1 - can whole kernel sweet corn (drained and rinsed)

    To taste:
    Chili powder (about 3 T.)
    salt (about 1 t.)


Directions

In large, deep skillet, saute the onion and garlic. After about 2 minutes, add the pound of chicken. Cook chicken thoroughly. (About 7-10 minutes)

Add black beans, white beans, kidney beans, tomato sauce, corn, and diced tomatoes. Bring to a slow simmer. Add chili powder and salt to taste.

Cover and simmer for about 10 minutes.

Makes 9-10 servings (Serving size: about 1.5 cups)
