Mashed Potato Salad

Introduction

A must have at picnics and family gatherings. A must have at picnics and family gatherings.
Number of Servings: 13

Ingredients

    5lbs Potatos
    4 large eggs
    2 cup Fat Free Miricle Whip
    1 cup Pickles diced small
    1.5 cup Onion diced small
    2 tbsp mustard
    salt
    pepper
    papryka

Directions

Peel potatos then cut up in to a large pan. Cover with water and boil until fork tender.

While potaos are boiling. Dice up onions and pickles and hard boil the eggs.

When potatos are tender drain well. Return to pan and mash. When completly mashed add 1 cup miracle whip and 2 tbsp mustard. Stir until well mixed. Stir in onions and pickles. add salt and pepper to taste along with a dash of papryka. Peel eggs and chop into potato salad. Fold eggs in carefully. Sprinkle top with papryka.
