Soy Ginger Broccoli Carrot Slaw

Introduction

This is a regular item in my rotation of low-fat veggie dishes to eat with lunch at work. This is a regular item in my rotation of low-fat veggie dishes to eat with lunch at work.
Number of Servings: 8

Ingredients

    2 cups shredded carrots
    2 cups shredded broccoli stems (often available prepackaged for broccoli slaw)
    2 Tbs fresh ginger root, minced
    1 Tbs sesame seeds
    2 Tbs soy sauce
    1/3 c rice vinegar
    3/4 c finely chopped fresh cilantro

Directions

Combine all ingredients. Add a little more rice vinegar if needed. Best after overnight in fridge. Makes about eight 1/2-cup servings.
