1 tsp olive oil, 1 scallion (chopped), 1 tbsp. chopped red bell pepper, 1/4 cup baby spinach, 3 egg whites, 1 tbsp. romano grating cheese.
Pour oil in a small non-stick frying pan on medium heat. Sautee scallions, pepper and spinach till softened. Pour egg whites over vegetables and cook for a few minutes until set. Sprinkle with cheese. When the eggs are firm enough to lift with spatula, flip over to cook on the other side. Cook another minute or two and transfer to plate. Enjoy.
