Introduction

really good and easy!!!!! really good and easy!!!!!
Number of Servings: 4

Ingredients

    4 boneless chicken breast
    1 cup instant white rice
    1 red bell pepper
    1 orange bell pepper
    1 small red onion
    3 cloves garlic
    4 med. mushrooms
    1 can cream of chicken soup
    1/2 can water
    1/2 can milk
    2 tablespoons country crock light

Directions

heat 1 tablespoon of butter in a pan. while pan is heating chop all veggies and saute them. while the veggies are sauteing, put can of cream of chicken and water and milk into a bowl mix well, adding 1 tablespoon of herbs de providence to mixture. Then, take veggies off heat and put them over into the cream of chicken mixture. season chicken breast with salt and pepper to taste. Melt the other tablespoon of butter in pan and brown chicken breast. place chicken breast into crock pot and pour cream of chicken mixture into pot. Let cook on low for about 4 hours.

prepare rice as instructed on the box.

When serving put chicken and sauce over rice.

This could also be cooked in the oven in half the time.

I served this with brussel sprouts.
