Oven Fried Chicken

Introduction

Really easy, surprisingly tasty "fried" chicken. Really easy, surprisingly tasty "fried" chicken.
Number of Servings: 4

Ingredients

    2 cups Special K
    1/2 cup EggBeaters
    1 lb skinless, boneless chicken breasts

Directions

Crush the Special K. Dip the chicken breasts in the EggBeaters. Press into Special K to coat on both sides. Place on baking sheet that has been sprayed with cooking spray. Bake at 375 for 30 minutes or until juices run clear.

    Excellent - disappeared so fast, didn't have any leftovers. Everyone wanted the recipe. Definitely making it again.
    I did almost a tablespoon of seasoning to the batter, then sprinkled more on the chicken just before baking. - 1/27/10

    EggBeaters are egg substitutes made from egg whites. They are found in cartons, usually near the eggs. They have no fat, no cholesterol, half the calories and the same amount of protein as regular eggs.

    i love this recipe. this satisfies my hubby that occassionally craves the nasty stuff. i suggest using special k or corn flakes. i've made with other cereals (corn checks) and just isn't as good. - 8/6/10

    This recipe is highly versatile. Add cracked pepper, lemon peel, garlic salt, ginger,and onion salt to the special k mix to spice it up. Its really yummy. - 5/7/10

    very crispy. easier and less messy than regular fried chicken. I didn't have enough special K so I ammended with plain bite size shredded wheat. I really enjoyed not having to rip off the skin and crispies Like i have to w/ reg. fried chick. And no greasy stove to clean. - 3/22/10

  • Seemed like a good idea, was ok the 1st day, but not good for leftovers. Chicken breasts are so dry. Any other suggestions. I guess it's possinle I over cooked it. I will give it 1 more try. - 3/3/13

  • Yeah this was good. I spiced mine up a little and mixedthesein with the egg mixture:
    -garm masala
    -crushed red peper
    -termeric powder
    -red chile powder
    -crushed black peper
    -white peper
    -onion powder
    -garlic powder
    -ginger power
    and it was really good
    you could even add in shredded parm i - 10/18/11

  • SO YUMMY!!! Stupidly I only used two chicken breasts for the two of us but the same amount of Special K as the recipe, so I was a weee bit high on calories, but it was so worth it, this is to die for. Fiance loved it too! - 3/3/10
