Bruchetta Chicken Pasta

Introduction

Ingredients

    7 oz Ronzoni Healthy Harvest Wheat Penne Rigate
    3 Grilled Chicken Breasts
    2 Cups Fresh Spinach
    2 Packets Equal Sweetener
    1/4 Cup Chicken Broth
    2 tbsp Balsamic Vinegar
    2 cans Del Monte Diced Tomatoes (no added salt)
    Basil to taste
    Garlic to taste

Directions

Season Chicken Breast with garlic and pepper. Grill Chicken Breast (I prefer to pre-grill mine on the BBQ for time and flavor).

Add chicken broth, tomato, equal, garlic, and basil to large skillet and simmer.

Reduce Balsamic Vinegar in pan over medium heat. (You will need to use more than 2 tablespoons but only need 2 tablespoons reduced for final recipe)

Add chicken and spinach to tomato mixture.

Mix cooked pasta, and tomato mixture. Drizzle balsamic reduction over the top.
