Blender Squash Casserole (adapted)

Ingredients

    6 mediumj-size yellow squash, thinly sliced
    1/2 cup chopped raw onion
    1/4 tsp celery salt
    1/4 tsp lemon pepper
    9 2" whole wheat crackers
    1 cup 2% milk
    3/4 cup Egg Beaters
    1 large egg
    3/4 cup (3 oz.) shredded cheddar cheese, divided
    1/2 tsp salt
    4 Tbsp crushed potato chips (approximately)
    4 Tbsp chopped walnuts

Directions

Arrange squash and onion in a microwavable dish. Sprinkle with celery salt and lemon pepper. Heat on full power 5 minutes.

Place half of the squash mixture in container of electric blender; add crackers, milk, Egg Beaters and egg, and about 2/3 of cheese. Process at high speed for 15 to 20 seconds or until well blended. Combine squash puree, remaining squash and salt in a mixing bowl; stir well.

Spray oil on interior of casserole dish (about 2 quts); sprinkle with potato chips, walnuts and remaining cheese. Bake in 350 degree over for 45 minutes or until center is set. Serve immediately. Yield: about 6 servings.
