Spanish olives with pimentos
Red, Green, and Yellow bell peppers
Chopped tomatos (for garnish)
Chopped scallions (for garnish)
Spray pan with Extra Virgin Olive Oil.
Sautee' olives, bell peppers, and garlic as desired.
Beat egg whites. Mix in salt and pepper.
Add beaten egg whites to pan. When egg has hardened, flip to cook other side.
While waiting, chop tomatoes and scallions. Set aside.
When omelette is ready, put on a plate and garnish with chopped tomatoes and scallions.
Makes 2 omelettes.
