Most Amazing Roasted Summer Vegetables

    1 eggplant, sliced (I like circles)
    1 zucchini, sliced in thin circles
    1 yellow summer squash, sliced into thin circles
    1 large tomato, cut into big pieces
    1/2 red pepper, cut into big pieces
    1/4 cup fresh dill weed, chopped

    Change vegetables to suit your tastes

    dried mint
    curry powder
    sea salt


Spray roasting pan with olive oil spray. Cut vegetables, add to pan, spray lightly and mix. Add dill weed, stir.
Cook in oven at 425 for 30 minutes.
Add dried mint, curry powder, and sea salt to taste.
