2 pounds beef english roast
3 jalapeno peppers
1 pound tomatillos
2 red onions
1 bunch cilantro
5 cups chicken broth
Husk, rinse and halve tomatillos
Stem, halve and seed jalapenos
Combine onion, tomatillos, and jalapeno in a bowl and mx with 1 tbsp oil. Spread out on a baking sheet. Roast for 20-30 minutes until lightly browned, stirring every 10 minutes.
Cut beef into one inch cubes. Brown the beef in oil in a dutch oven. Add the chicken broth and the roasted vegetables. Cover and put in oven for 90-120 minutes until the beef is very tender.
Rough chop one cup of cilantro. Puree in a blender with 2 tbsp of water. Add the puree to the beef. Salt and pepper to taste.
Could be served with rice and/or flour tortillas.
