1 lb shrimp
1 cup frozen corn
1 4 oz can green chiles
2 cups green enchilada sauce
12 corn tortillas
1 15oz can no fat green chile refried beans
1 cup weight watchers mexican cheese
1/2 cup cilantro
dice shrimp and combine with corn, chiles, 1/2 cup enchilada sauce and microwave for 2.5 min.
Spread 1/4 cup enchilada sauce in dish. Top with overlaping layer of 6 tortillas. Spread refried beans evenly over the tortillas. Top beans with shrimp mixture. top with the remaining tortillas. Pour the remaining sauce over the top. Cover with tin foil and cook for 20 min.
Remove foil; sprinkle cheese on top, continue baking for about 5 min. Top with cilantro and serve with lime wedge.
