Chicken and Apricot Tagine (Stew)

Serve over cooked brown rice, quinoa seed, or couscous

Number of Servings: 4

Ingredients

    4 (about 500g) chicken thigh cutlets
    1/4 cup dried apricots
    1/4 cup pitted prunes
    200ml chicken stock
    1/2 med onion, chopped
    1 tsp Tunisian spice mix, or Harissa spice mix (or to taste)
    2 Tbs honey

Directions

Place chicken, dried apricots, prunes, stock, onion, and spices in a saucepan over high heat. Bring to the boil. Reduce heat to medium-high and cook, covered with a tightly fitting lid, for 30 minutes or until chicken is cooked.
Stir in honey and simmer, uncovered, for 5-8 minutes or until sauce thickens slightly.
Serves 4
