Introduction

This is a great winter warming soup, great with mixed herbs added too. I'll sometimes blend one third of soup, then return it to the rest, makes it a little thicker. This is a great winter warming soup, great with mixed herbs added too. I'll sometimes blend one third of soup, then return it to the rest, makes it a little thicker.
Number of Servings: 10

Ingredients

    1 litre chicken stock, plus 250ml cold water
    150g carrots, chopped
    120g celery, sliced
    2 x 400g tins of diced or crushed tomatoes, if unavailable just chop up tins of whole tomatoes
    400g tin of chickpeas, drained and rinsed
    1 x large red pepper diced
    tablespoon mixed herbs - optional, just use your favourites
    1 x medium onion chopped into small pieces
    2 x heaped teaspoonfulls minced garlic

Directions

Chop all vegetables to whatever size you like. Spray the inside of large saucepan with cooking spray and cook onion till soft, but not browned. Add all other ingredients at the same time, bring to the boil, then simmer for about 45 minutes. Serve hot, with or without bread. If using herbs, add them with the other ingredients at the beginning of cooking. Enjoy.
