Potato Salad with carrots

Ingredients

    6 medium potatoes, cubed (peeling optional)
    1 onion, sliced
    4 medium carrots, about 3/4 inch diced
    1 tsp sugar
    1/2 tsp salt
    1 tsp black pepper
    1/2 tsp dried dill
    1 tbsp white wine vinegar
    2 tbsp light ranch dressing
    1/4 cup nonfat yogurt

Directions

Boil potatoes until they are fork tender. Place onions and carrots in strainer. Drain potatoes over onions and carrots to soften. Let sit for 5 minutes. Sprinkle sugar, salt, pepper and dill over potatoes. Pour strainer contents back into pot and stir. Briefly turn heat on under potatoes to dry pot. Sprinkle with white wine vinegar. Let sit for 5 minutes. Add light ranch dressing and yogurt. Mix thoroughly. Adjust seasonings to taste. Can be served immediately for a warm potato salad or refrigerate for several hours for a more traditional potato salad. about 3/4 to 1 cup per serving.
