Introduction

Light and refreshing, this fluffy lemon treat melts in your mouth! Ingredients

    Water, tap, 1 cup (8 fl oz)
    Neufchatel Cheese, 8 oz
    Kraft Jell-o Brand Sugar Free Low Calorie Lemon Gelatin Dessert (Jello), 1 Packet
    Vanilla Extract, 1 tsp
    Dash of Salt
    1/2 C + 1 Tbsp Splenda
    Cool Whip Lite, 1 Tub
    Smart Balance, Smart Balance Light Buttery Spread, 1 Tbsp, room temperature
    Applesauce, unsweetened, 1 Tbsp
    Flax Seed Meal (ground flax), 1 Tbsp
    Lemon Juice from 1/2 of a Lemon
    Low Fat Honey Graham Crackers, 3 Full Sheets

Directions

1. Add gelatin packet to 1 C of boiling water. Whisk until dissolved. Cool in refrigerator for 20-30 minutes.


2. While gelatin is cooling, crush graham crackers in a ziplock baggie until crumbs. Add Smart Balance, applesauce and 1 Tbsp Splenda. Stir together and press 3/4 of the mixture into an 8" brownie pan or round pie pan to create a crust.


3. Cut Neufchatel cheese into small squares and mix with lemon gelatin. Whip until smooth. Add vanilla, tub Cool Whip, dash of salt and 1/2 C Splenda. Stir together. Whip on high speed until very smooth.


4. Pour mixture over graham cracker crust. Cover and refrigerate at least 1 hour.


5. Just prior to serving, sprinkle with remaining graham cracker crumbs. Optionally, top individual pieces with small peak of whipped cream, mint leaves and a few fresh raspberries or blackberries.


Serves 12-16.
