Introduction

This recipe was altered from another higher calorie, higher fat recipe. It is still moist and delicious!

This recipe is a treat. I have made it healthier with less fat and calories, but it is still just a treat. It is really delicious and less calories and fat without the chocolate chips, but that is how my family likes it!

This recipe is a treat. I have made it healthier with less fat and calories, but it is still just a treat. It is really delicious and less calories and fat without the chocolate chips, but that is how my family likes it!

Number of Servings: 96

Ingredients


    1/2 c white sugar
    1 c. applesauce
    2 eggs
    4 egg whites
    2 teaspoons vanilla extract
    3 cups whole wheat pastry flour
    2 teaspoons baking soda
    1 teaspoon salt
    1 cup buttermilk
    5 medium bananas
    1 cup flax seed meal(opt)
    1 cup old fashioned oats
    12 ounce package of chocolate chips

    Optional ingredients are not included in nutrition calculation.

Directions

Preheat oven to 350º. Grease 2 small muffin pans. Mix all ingredients. Fill 3/4 full.
Bake at 350º for10 minutes, or until toothpick inserted into center comes out clean.
Cool in pan for approximately 10 minutes before removing. Place on wire rack to cool.

Makes 96

    Sorry, there was a typo on the serving size. But good news, the calories went down!

    As for the other comment this was a banana bread recipe that I changed to a banana muffine recipe.

  • How do you cut 1-loaf of banana bread into 15-slices???? They must be some aweful thin slices, lol! - 5/27/08

    I am sorry, the loaf pans are large loaf pans. I should have stated that in the recipe. It is very easy to get 16 decent slices from it.
