Falfel pattys (from Far East Mix)

Introduction

I cut down the oil from 1/3 cup to only 3 Tablespoons and by reducing the size of the patties, to use as appetizers, I made 18 tiny falfels, cooking in 2 batches using half the oil per batch. They turned out just fine, crispy and yet not quite as fatty as the box calls to make. Ingredients

    1 box (6oz) Far East Falafel Vegetarian Patty Mix
    1 1/4 cup water
    3 Tablespoons water

Directions

This makes 18 pattys, each about 1 inch in diameter,.

1. Make according to the directions on the box, making them half the recommended size.

2. Heat 1 1/2 Tablespoons of oil till a drop of water sizzles, then quickly fry half the patties for about 4 minutes per side. The oil will be almost completely absorbed by the time you turn them, but they will still get nice and golden brown. Just don't move them around until they are ready to come out so they can form a crust, otherwise they tend to fall apart. Repeat with the second batch.

3. Drain on paper towels and serve with hummus, cucumber slices and hard boiled eggs, with a green salad.

4. To serve at a picnic or pot luck, I find cutting these in half, to make 36 bite sized pieces, after they are cooked, works well. Use a very sharp knife so you get a clean cut, then chill overnight. You'll end up with nice half moons for a perfect little mouthful.
