Pumpkin Pie "Icecream"

Introduction

It's not really icecream, but it hits the spot and is a great pre-bed meal. It's not really icecream, but it hits the spot and is a great pre-bed meal.
Number of Servings: 1

Ingredients

    113g or 1/2 C Low Fat Cottage Cheese, small curd
    81g Pumpkin Puree
    4t Splenda
    1/4 to 1/2t Pumpkin Pie Spice
    15g Vanilla Protein Powder

Directions

1.In a small container, add cottage cheese and lightly mash the curds into smaller pieces. Add pumpkin puree, splenda, spices, and protein powder. I used EAS Vanilla Protein Powder for the calculations but you can use whatever brand you like.
2.Slowly stir all ingredients until well combined.
3.Place a lid on the container and put it in the freezer for at least 2 hours.

Parts of the "icecream" will still be soft, and parts along the edges of the container will be hard. I like the combination of both, but you can change how long it is in the freezer to change the consistancy of the "icecream". If you like things really sweet you might want to add more sweetener.

Additional toppings: miniature dark chocolate chips and/or chopped walnuts (not included in nutritional info).
