Chilled Cucumber & Red Pepper Soup

Ingredients

3 large cucumbers, peeled, cored & diced
1 bell pepper, cored & diced
3 cloves garlic
4 T. rice vinegar
6 T. sour cream
1 t. salt
1/4 t. cayenne pepper (optional)
1-1/2 T. dill weed, dried
ice cubes as needed
Directions
1. Mix all ingredients in large bowl.
2. Puree all ingredients in blender in batches, adding water to facilitate easier blending.
Makes four servings.
(** Note: Chill for a few hours in the refrigerator before serving, or to serve right away, blend with ice cubes to desired chill factor)

This recipe sounds delious. I have made a cucumber soup before, but this is a new idea. Can't wait for our cucumbers in the garden to get ready! Will be trying it out as soon as they are ready. - 6/26/09

Thanks. :) This was a really paired down version of a FN recipe. I'd go easy on the cayenne pepper, to start. Use a few dashes. You migth even find it does just fine w/o the cayenne pepper. :-)
