Mediteranean Couscous

Ingredients

    1 3/4 c. chicken broth
    2/3 c. Couscous w/milled flax seed & soy
    Hodgson mill
    1 c. tomato chopped
    1/2 c. cucumber chopped
    1/2 c. sweet pepper (yellow or red) chopped
    1/3 c. onion (red)chopped
    juice from 1/2 fresh lime and little zest
    1 tsp. sage ground
    4 tsp olive oil
    1/2 tsp salt
    1/2 tsp black pepper
    1/2 tsp dill weed

Directions

Bring broth to a boil in medium saucepan: gradually stir in couscous. Remove from heat: cover and let stand 5 minutes. Fluff with a fork. Combine couscous, tomatoes and remaining ingredients in a large bowl
makes 3 to 4 servings
