ROASTED RHUBARB

Introduction

Ingredients

    24 ounces rhubarb
    Rind and Juice of an Orange
    1/4 cup Splenda Blend
    1 TBL of pure vanilla extract

Directions

Preheat oven to 300F. Cut rhubarb in chunks or lengths, toss with orange juice and Splenda. Arrange on a rimmed baking sheet and roast for about 30 minutes, stirring after 15 minutes, just until soft and warmed through. Serve warm or at room temperature. If your rhubarb is not red enough, add a sprinkle of Raspberry Sugar Free Jell-O.
