Mock chicken curry.

Introduction

wanted to make a curry that my daughter would eat. So I played with some ingredents and here is what I came up with. wanted to make a curry that my daughter would eat. So I played with some ingredents and here is what I came up with.
Number of Servings: 8

Ingredients

    20 oz of chunked up chicken breast
    1 can tomato paste
    2 tablespoons curry powder
    1/2 cup water

    2 Tablespoons olive oil
    2 cups chopped onions
    2 cup chopped green pepper
    1 peeled and chopped mango
    4 cups cubed potatoes.
    1 1/2 cups frozen green peas
    2 cups of water

Directions

In Large frying pan heat olive oil, add onions, peppers, chicken, tomato paste, 1/2 cup water. Cook on med heat -hi heat for about 10 minutes stirring often.

Trasnfer chicken mixture to large pot. Add 2 cups of water, potatoes, mango and peas. Simmer for about 30 mins till potatoes are tender.

Add salt and chili peppers to your own taste.
makes 8 11/2 cup servings.
