Banana Squash Muffins

Submitted by: DESIGN_LADY05

Introduction

This is a variation of the "Fruit and Veggie Muffin" recipe I found at www.5dollardinners.com
I use my stand mixer to make these. Very easy, not very sweet, delicious!
Great for batch cooking and storing in the freezer. Just thaw 10 seconds in the microwave or a few minutes onthe counter.

  • These are yummy! I made these changes: 1/3 cup oil, no applesauce (didn't have any), 1/3 cup brown sugar, 1/3 cup honey, no granulated sugar, and actually used about 1/2 tsp salt, but that's my preference. They rose beautifully and taste delish! Thanks! - 10/21/12
