Pineapple Chutney

Ingredients

    8 ounces crushed pineapple (no sugar)
    2 T. Splenda
    2 T. white vinegar
    2 T. chopped onions
    2 T. chopped red or green bell peppers
    1 T. minced fresh ginger
    1/4 t. crushed red pepper flakes
    2 T. raisins

Directions

In microwave safe bowl, combine pineapple with juice, Splenda, vinegar, onions, peppers, giner and pepper flakes. Microwave on hight for 3-5 minutes. Stir in the raisins and microwave for another minute or two. Let the chutney stand at least 5 minutes before serving. It is good warm or cold, and keeps in the fridge for 2 weeks.
