Leftover Magic: Sweet & Sour Style Pork

Introduction

Leftover Magic recipes attempt to show how to use up what you have in the refrigerator, without eating the same meal twice.

This particular recipe uses leftover teriyaki style pork. I used Smithfield Pork Sirloin, but any style will do. Other changes you might want to try are:
-- mandrin oranges & orange juice in place of the pineapple
-- subsitute any of the vegetables for another variety. Try zucchini, green beans, broccoli or eggplant.

Number of Servings: 3

Ingredients

    1 tablespoon olive oil
    1 medium red bell pepper, cut into bite-sized pieces
    1 small green bell pepper, cut into bite-sized pieces
    1 medium onion, cut into bite-sized pieces
    2/3 cup sliced carrot
    1/2 teaspoon black pepper

    10 1/2 ounces leftover teriyaki style pork, cut into bite-sized pieces
    4 ounces fresh sliced mushrooms, any variety
    1/2 cup water chestnuts, sliced or diced
    1 cup pineapple chunks or tidbits

    1 cup pineapple juice (drained off of canned fruit)
    1 tablespoon cornstarch



Directions

1. HEAT the olive oil in a large skillet /wok over HIGH heat. Add the peppers, onion and carrot. Stir fry about 3 minutes.

2. ADD the pork, mushrooms, pineapple and water chestnuts. Continue cooking for 2 minutes.

3. IN a small bowl combine the pineapple juice and the cornstarch. Stir until thoroughly mixed. Pour over mixture in skillet/wok. Continue cooking for 1 minute or until sauce thickens.

Serving suggesitons:
Serve over rice or noodles. Garnish with chopped nuts or crunchy chow mein noodles.
