Leftover Magic: Refrigerator Strata

Introduction

Leftover Magic recipes attempt to show how to use up what you have in the refrigerator, without eating the same meal twice.

I make this type of recipe a couple of times a year to clean out the refrigerator of all the leftovers and I use it for any meal. It makes a hearty breakfast or a great lunch or dinner served with a salad or vegetable and a side like cranberry sauce. The calories calculation for this recipe will vary widely based on the actual ingredients you use, but I will show what I used for this calculation. So use up all that good stuff in your frig and don't be afraid to get creative.

Number of Servings: 10

Ingredients

    12 ounces of bread (I used Publix multi-grain)

    16 ounces of meat (I used 4 ounces of turkey sausage patties and 13 ounces of canned chicken)

    3 cups of vegetables (I used green pepper, roasted red peppers, a leek, roasted garlic, and zucchini)

    2 teaspoons olive oil

    1 teaspoon-1/4 cup of something zippy (I used 4 oz of mild green chilis and 1/4 tsp of cayenne)

    2 1/2 cups of cheese (I used a mixture of Sargento reduced fat cheddar & mexican)

    Equivilant of 8 eggs (I used 4 eggs & 1 cup of egg substitute

    1 1/2 cup of liquidy ingredients (I used 3/4 cup each of low fat sour cream and 1% milk)

Directions

1. Cut up all the bread and meat into bite-zised pieces. Chop all the vegetables.


2. In a large bowl put the bread, meat, and your zippy ingredients


3. In a frying pan, heat the olive oil. When hot, add the vegetables and saute of about 3 minutes. Remove from heat and add to bread mixture. Stir to combine.


4. Combine the eggs and liquidy ingredients. Whisk until thouroughly combined.


5. Add 2 cups of cheese to the bread mixture and stir again. Pour bread mixture into a 9x13 baking pan.


6. Pour the egg mixture over the bread mixture. Top with the remaining 1/2 cup of cheese. Refrigerate for 2-24 hours to allow flavors to meld and for the bread to soak up the other ingredients.


7. Pre-heat the oven to 350. When the oven is ready bake the strata for 40-45 minutes until the top is brown and bubbly. Remove from the oven and cover loosely with aluminum foil. Allow strata to rest for 5-10 minutes for the eggs to set before cutting and serving.
