Curried Bean Soup

Ingredients

    2 cups dried red kidney beans, soaked and drained
    3 1/2 quarts water
    1 bay leaf
    1 tsp cayenne or other red pepper
    2 medium potatoes, diced
    1 large onion, chopped
    PAM or other cooking spray
    2 tsp curry powder

Directions

Put beans, water, bay leaf, and red pepper in a large pot and slowly bring to a boil. Reduce heat and simmer for 1 hour. Add the potatoes and simmer for an additional 30 minutes.

Spray a non-stick pan with cooking spray and saute the onion until golden brown. Stir in the curry powder.

Using a potato masher, coarsely mash the beans and potatoes with the liquid in the pot and then add the curried onions. Simmer for an additional 20 minutes or until soup thickens.
