Buffalo Chicken Salad

Ingredients

    1 T hot sauce (I use Frank's Red Hot)
    1 t apple cider vinegar
    1/2 t brown sugar
    6 oz chicken tenders (about 3 tenders)
    1/2 C panko bread crumbs
    1 romaine lettuce heart, chopped
    1.5 T light bleu cheese dressing (I use and love Bolthouse Farms Yogurt Bleu)

Directions

Whisk together the hot sauce, vinegar and brown sugar until the sugar dissolves.

Put the chicken in a zip top bag and pour the marinade over, "squishing" and turning to coat.

Marinate 30 min to several hours, depending on how spicy you want the chicken. More time = more spice. I like to start the chicken in the morning for lunch so it marinates 3-4 hours.

When you're ready for salad, preheat the oven to 400.

Pour the panko into a shallow dish. Dredge each tender in the panko, pressing it into the chicken.

Place the breaded chicken carefully on a broiler pan or oven safe wire rack over a sheet pan.

Bake 10-15 min, turning once.

Meanwhile, put the dressing in the bottom of a large bowl. Add the lettuce and celery and toss to coat.

When the chicken finishes cooking, slice as desired and arrange on top of the salad mixture- I just eat it right out of the tossing bowl to save a a dish!
