Introduction

Nothing light about this preparation... but some damned fine and tastey cupcakes. I expect it could be doctored, but as it stands it's a great treat. Nothing light about this preparation... but some damned fine and tastey cupcakes. I expect it could be doctored, but as it stands it's a great treat.

Ingredients

    1 box Betty Crocker White Cake Mix
    1 box Kraft Jello-o Brand Fat Free Sugar Free Pudding, Vanilla
    1/2 C Orange Juice
    1/2 C Water
    1/2 C Canola Oil
    5 large eggs
    2 T Poppy seeds
    1 T Vanilla

Directions

Mix all ingredients in a large bowl until just mixed
Pour into prepared cupcake pans (2) and bake at 350 until done - about a half an hour.
Makes just over two dozen regular sized cupcakes or about 50 minis.
