Curried Chicken Salad

Introduction

Serve with crackers, english muffins or your favorite bread. Serve with crackers, english muffins or your favorite bread.

Ingredients

    Chicken Breast, no skin, 18 ounces
    Mayonnaise, Hellman's Light, 4 tbsp
    Raisins, 1 small box (1.5 oz)
    Apples, fresh, 1 medium (2-3/4" dia)
    Curry powder, 2 tbsp
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long) (remove)
    Carrots, grated

Directions

Combine mayo and curry powder. Then combine cooked chicken with all other ingredients and stir. Serve on a lettuce leaf, toast or crackers.
