Pinto Soup

Number of Servings: 6

Ingredients

    Pinto Beans, dry, 1 lb, about 3 cups
    Yellow Onions, raw, 1 large
    Canola Oil, 2 tbsp
    Garlic- as much as you want
    Vegetable stock, 4 cups

Directions

Soak the beans, then boil until tender. While they're boiling, heat the oil in a wide pan. Chop the onion, then sauté it with the garlic until the onions are soft. Drain the beans. Blend all ingredients until smooth, or half if you like the soup chunky.

Stuff you can add:
dollop of sour cream
spoonful of salsa
cumin, cilantro, etc.
