Oven Potato Pancakes

Ingredients

    1/4 cup I can't believe it's not butter fat free spread
    3 large onions, chopped
    4 egg whites
    3 cups mashed potatoes
    1/2 cup flour
    dash peer
    dash salt
    2 tablespoons water

Directions

Preheat oven to 375 degrees
In skiller, melt butter, add onions and cook over moderate heat for 3 minutes, stirring
Remove from heat
In mixing bowl, add eggs, onions, potatoes, flour, salt, and pepper and stir until mixture is firm
Form mixture into 16 round pancakes and place on a greased baking sheet
Bake pancakes till golden brown, 20-25 minutes
