Low Sodium Vegetable Beef

Introduction

If you like vegetable soup and need it to be low sodium. I like it, my family can add salt to taste. You can add whatever herbs you like. If you like vegetable soup and need it to be low sodium. I like it, my family can add salt to taste. You can add whatever herbs you like.

Ingredients

    8 ounces of lean beef
    2 envelopes Herb Ox no sodium beef bullion
    1 1/2 cup dice potatoes
    1 med onion (1 cup chopped)
    1 small zuchinni, chopped
    2 cups fresh tomatoes, chopped
    fresh herbs to your taste
    6 cups water

Directions

Use ground beef or dice fine. Add water, beef, and Herb Ox bring to a boil and cook about 20 minutes. Add all vegetables, bring back to boil, then turn down to a simmer for 40 minutes or until done.
Makes 4 large (about 2 cup) servings
